When you go to the supermarket, you often see two types of noodles side by side this season – hiyamugi and somen. I usually eat somen more often, but it seems I accidentally bought hiyamugi the other day.
When I tried eating it, it had a texture like al dente. (laughs) Unlike the smooth, easy-to-eat texture of my usual somen, this one has a crispy, chewy bite to it. It's a new discovery.
