Meal Planning Tips for My Daughter with Developmental Differences
I'm raising a daughter with developmental differences. After adjusting her medication, her daily life has become much more stable, and I feel grateful as a parent. However, she has a strong craving for sweets and often asks for sugary drinks and cake. While I want to respect her feelings, I need to be thoughtful about her health and nutrition.
I decided to prepare a hot pot meal with balanced nutrition, using carrots, napa cabbage, spinach, eggplant, chicken, and pork. I challenged myself to peel vegetables for the first time and seasoned the dish with ponzu sauce and bonito dashi. Both my daughter and I said it was delicious! We enjoyed a satisfying meal while keeping carbohydrates and sugar in check.
Cooking and cleaning up took effort, but I felt proud to create homemade flavors that you can't find in restaurants. The ponzu seasoning combination worked wonderfully. Through these small efforts, I want to continue cherishing the time I spend with my daughter.
